10 Honey Cocktail Recipes You Need to Try This Weekend

There’s a particular kind of magic that happens when honey meets spirit. The sharpness softens. The edges round off. At our hives in Wiltshire, surplus honey that would otherwise sit unused on the frame goes straight into whisky, rum, vodka, and now tequila too. So when we say we know our way around a good honey cocktail recipe.

Why honey spirits make the best cocktails

Sugar syrup does one job in a cocktail: it sweetens. Honey does considerably more. It brings floral top notes, a rounder mouthfeel, and a lingering warmth that plain sugar can’t touch, which is exactly why cocktails with honey have quietly become a favourite among bartenders who care about texture as much as taste.

1. Honey Whisky Old Fashioned

The Old Fashioned is where honey whisky properly shows off, all slow-sipping warmth with a caramel undertow that a standard bourbon can’t quite reach on its own.
Ingredients
  • 50ml Beeble Honey Whisky
  • 2 dashes Angostura bitters
  • 1 orange peel
  • Ice
Method
  1. Add the Honey Whisky and bitters to a rocks glass filled with ice.
  2. Stir gently until well chilled.
  3. Twist the orange peel over the glass to release the oils, then drop it in.
Variation: Swap the orange peel for a lemon twist if you prefer something brighter, and a single large ice cube will slow the dilution beautifully.

2. Honey Whisky Sour

A proper sour needs balance, and this is where the honey does its quiet best work, taking the edge off the lemon without ever tipping into cloying.
Ingredients
  • 50ml Beeble Honey Whisky
  • 25ml fresh lemon juice
  • 1 egg white (optional, for a velvety foam)
  • Ice
Method
  1. Add all ingredients to a shaker without ice and dry shake for 15 seconds if using egg white.
  2. Add ice and shake hard for another 15 seconds.
  3. Strain into a rocks glass over fresh ice.
Variation: No egg white to hand? Aquafaba (the liquid from a tin of chickpeas) gives the same silky foam.

3. The Beeble Cosmopolitan

Honey Vodka was made for exactly this moment, when you want something that feels a little cosmopolitan, in every sense of the word.
Ingredients
  • 50ml Beeble Honey Vodka
  • 25ml triple sec
  • 25ml fresh lime juice
  • 25ml cranberry juice
  • Ice
Method
  1. Add all ingredients to a shaker filled with ice.
  2. Shake well until thoroughly chilled.
  3. Strain into a chilled coupe or martini glass.
Variation: Garnish with a flamed orange twist for a little extra theatre, or a fresh lime wheel for something simpler.

4. Dark & Swarmy

Yes, it’s a pun. No, we’re not sorry. Honey Rum and ginger beer is one of those pairings that just works, tropical warmth meeting a proper spicy kick.
Ingredients
  • 50ml Beeble Honey Rum
  • Juice of ½ lime
  • 100ml ginger beer (or to taste)
  • 2 dashes Angostura bitters
  • Ice
Method
  1. Fill a highball glass with ice.
  2. Add the Honey Rum, lime juice, and bitters, then top with ginger beer.
  3. Stir gently to combine.
Variation: Garnish with a wedge of lime and a few slices of fresh ginger for extra bite.

5. Honey Whisky Hot Toddy

Some cocktails are for celebrating. This one is for curling up next to a fire. It’s the grandfather of hot drinks for good reason, and honey whisky was made for it.
Ingredients
  • 50ml Beeble Honey Whisky
  • 100ml boiling water
  • Juice of ½ lemon
  • ¼ tsp ground cinnamon
  • 1 cinnamon stick, to serve
Method
  1. Add the Honey Whisky and lemon juice to a heatproof glass.
  2. Top with boiling water and stir in the cinnamon.
  3. Garnish with the cinnamon stick and a lemon slice.
Variation: A couple of whole cloves steeped in the boiling water beforehand adds a lovely depth if you have five extra minutes.

6. Bee’s Knees

A genuine Prohibition-era classic, and one that only makes more sense with a honey spirit at its base rather than the usual gin.
Ingredients
  • 50ml Beeble Honey Whisky
  • 25ml fresh lemon juice
  • Ice
Method
  1. Add the Honey Whisky and lemon juice to a shaker filled with ice.
  2. Shake well.
  3. Strain over fresh ice into a rocks glass and garnish with a sprig of rosemary.
Variation: This one is lovely with Honey Vodka too, if you want something a touch cleaner on the finish.

7. Caribbean Honey Rum Punch

This is the one for when there are people coming round, and you don’t want to be stuck behind the bar all evening. Mix it, chill it, and let it do the work.
Ingredients
  • 250ml Beeble Honey Rum
  • 125ml lime juice
  • 125ml papaya juice
  • 250ml pineapple juice
  • 250ml orange juice
  • 250ml grenadine syrup
  • ½ tsp Angostura bitters
  • Pineapple slices, to garnish
Method
  1. Mix all ingredients together in a large jug.
  2. Chill in the fridge for 30–40 minutes.
  3. Pour into chilled glasses and garnish with pineapple, orange segments, or maraschino cherries.
Variation: Scale this up for a party easily. It holds beautifully in a punch bowl with a block of ice floating in the centre.

8. The Honey Margarita

Our newest spirit gets the classic treatment. Honey Tequila brings a floral softness that plays beautifully against the customary citrus sharpness of a margarita.
Ingredients
  • 50ml Beeble Honey Tequila
  • 25ml triple sec
  • 25ml fresh lime juice
  • Ice
  • Salt, for the rim (optional)
Method
  1. Run a lime wedge around the rim of a glass and dip it in salt, if using.
  2. Add the tequila, triple sec, and lime juice to a shaker filled with ice.
  3. Shake well and strain into the prepared glass over fresh ice.
Variation: Swap the salt rim for a chilli-salt blend if you like a bit of heat with your sweetness.

9. Honey Espresso Martini

Somehow both a nightcap and a second wind, an espresso martini made with Honey Vodka trades the usual sharp edge for something rounder and altogether more moreish.
Ingredients
  • 50ml Beeble Honey Vodka
  • 25ml fresh espresso, cooled
  • 15ml coffee liqueur
  • Ice
Method
  1. Add all ingredients to a shaker filled with ice.
  2. Shake vigorously for at least 15 seconds to build a proper foam.
  3. Double strain into a chilled coupe glass and garnish with three coffee beans.
Variation: No coffee liqueur? A teaspoon of extra honey stirred into the espresso before shaking does a similar job.

10. Honey Whisky Mule

A gingery, zesty long drink that’s endlessly refreshing, and about as low-effort as good cocktails get.
Ingredients
  • 50ml Beeble Honey Whisky
  • 15ml fresh lime juice
  • 120ml ginger beer
  • Ice
Method
  1. Fill a copper mug or highball glass with ice.
  2. Add the Honey Whisky and lime juice, then top with ginger beer.
  3. Stir gently and garnish with a slice of lime.
Variation: A few muddled mint leaves at the bottom of the glass turn this into something closer to a mule-julep hybrid, and it’s rather good.
